How to Cook

We know no one can cook eggrolls like Famous Laura can, but we can still aspire to Eggroll Greatness….by following these instructions!

Eggrolls like it frosty! Keep them frozen, no matter which cooking method you use. Thawing can lead to rips and tears in the eggroll wrappers, and that’s no fun for anyone!


Oven

Oven temperatures vary greatly, so the best strategy for oven-baking is to monitor the eggrolls closely your first few times cooking them this way. In our home, we start with a preheated oven at 375 degrees. Spray your frozen eggrolls with a spray oil of your choice, making sure to cover all sides. Place on a baking sheet and let them bake until they are golden brown, about 10 minutes. Turn the eggrolls over and let them bake another 10 minutes, so that both sides are golden brown.


Frying

Frying is the original method of cooking, and it’s how we cook all of our eggrolls when we sell them at the Omaha Farmer’s Markets. The key to a good fried eggroll is the temperature of the oil. You want to make sure your oil is heated before you ever drop your first eggroll in the pan. Our deep fryer heats the oil to 375 degrees when we cook in bulk. How can you achieve this at home? Watch for the sizzles and crackles! Pour your oil into your frying pan and heat it over medium heat. Use enough oil so that at least half of your eggroll is covered when you fry them. When you place your frozen eggrolls into the pan, they should sizzle and crackle immediately. If they aren’t, the oil isn’t hot enough and you can wait a little longer or increase the temperature a bit next time. When the oil isn’t hot enough, if can cause the wrapper to to tear and rip, and you’ll lose your eggroll-innards in the pan. So sad!

Once you’ve got them sizzling and crackling, let them cook for about 5 minutes, until they are golden brown. Turn the eggroll to cook the other side for about 5 minutes, and keep turning until all sides are golden brown and crispy. Tongs are your best friend for this process.

Air Frying

Air frying isn’t something we have tried ourselves, but we have gotten such great feedback from our customers that we decided to include this method as well. It seems that people have had lots of luck with the air frying methods. We have heard 425 for 10 minutes, and we also have had people tell us 400 for 5-7 minutes, then flip and do 5 minutes more.
